Mexican Ceviche
1 pound of jumbo shrimp (peeled, without tails and de-veined)
5 large lemons
1/4 cup of chopped fresh cilantro
1 tablespoon of salt 1 cucumber (chopped)
1 large tomato (chopped and seeded)
2 fresh jalapeno peppers (chopped and seeded), add more if you like your plates more spicy
1 bunch radishes
1/4 cup of cilantro (chopped)
2 cloves of garlic (minced)
1 tablespoon of olive oil Black pepper (ground)
Tortilla chips
Place the lemon over the shrimp and let it cook for 30 minutes. Mix the all the ingredients (careful with the jalapeno strong flavor, add it after you mixed all the other ingredients). Refrigerate for an hour, and serve with tortilla chips.
