Salmon Ceviche Recipe

1 pound of Fresh Salmon filet
1 cup of onion (chopped into slices)
1/2 bunch of cilantro, chopped
1 chopped bunch of chives
3 Medium Tomatoes
2 Lemons and 2 Limes
Salt and Pepper
Fresh Ginger
A few Parsley Springs
4 table spoons of olive oil

Squeeze the Lemons into a ceramic bowl. Then add the parsley, the cilantro, onions, and chives. Mix well. Cut the salmon filet into small pieces. Squeeze the limes and add them to the mix along with the salmon. Add the olive oil and the tomatoes. Refrigerate for 6 hours and serve with tortilla chips, lettuce, sweet potatoes or yams.
