Tex-Mex Ceviche (Fish)

2 pounds of white meat fish
12 Limes or lemons
2 tablespoons of salt
1 large onions sliced
2 teaspoons of Black pepper
2 Stalks Celery (tender part)
4 tablespoons of cilantro
2 tablespoons of habanero sauce
10 ounzes of extra virgin oil
2 seedless sliced tomatoes
1 ripe avocado
tortilla chips

Mix all the ingredients (except the onions, the peppers, the lettuce, the avocado and the virgin oil ). Soak the fish in salt water for 10 minutes add the virgin oil. Pour boiling water over the onions and add to the fish along with the hot peppers. Add the aformentioned ingridients to the mix. Let the mixture sit for 1 hour. Sliced the avocado in 4 equal parts. Serve the ceviche mix on a bed of lettuce, one of the avocado slices, and the tortilla chips. (serves 4 people)
